Mouthwatering Moroccan Salad
This genius combination of nutty grains, subtle spices and citrus really gets the taste buds going. We've added some apricot pieces to give it that authentic sweet flavour you find in so much lovely Moroccan food, and then some tangy preserved lemon to bring it all to life.
Hints & tips
This lovely salad is incredible as a side dish with roast and stewed lamb, or a fillet of juicy grilled fish. It's also wonderful spooned into a wholemeal pitta bread with some grilled chicken or steak, fresh and mint and yoghurt - ad a little chopped red chilli to fire things up a bit!
What's so good about bulgar wheat...?
Bulgur wheat is a quick-cooking grain with great texture and a light, nutty taste that makes it an amazing carrier of flavour. It really lets spices sing and is lovely with lemony flavours, hence why it's so popular in the Mediterranean.
