Mushroom Burrito
You will need – • Tasty Bowl Herby Mushroom Grains • 2 large Wholewheat Tortillas • 1 Tin of Beans (we like to use black beans) • 1 Red Pepper • 1 Red Onion • 1 tbsp Mexican Seasoning (paprika, garlic, chilli, cumin etc..) • 2 tbsp Salsa 1. Start by preparing the vegetables. Thinly slice the red pepper and red onion ready to pan fry. 2. Heat 1 tbsp of oil in a large frying pan and add in the pepper and onions. Cook for 2 minutes before adding in your spice mix and 50mls of water. Continue to cook for 5 to 7 minutes over a low heat until the vegetables are soft. 3. Next, drain and lightly rinse black beans. Shake off excess water and transfer to the pan with the cooked vegetables and stir through to warm the beans. 4. Now heat the Tasty Bowl Herby Mushroom Grains according to the instructions on the pack. 5. To complete the burrito, place the tortillas on a large piece of foil. Evenly distribute the grains onto each tortilla in addition to the vegetables. 6. Lastly, add a tbsp of salsa onto each tortilla and close by tucking in either side of the ingredients and then fold over the remaining tortilla. Use the foil to help you close the burrito and this will help keep all the ingredients together. 7. Unwrap the foil from one end to enjoy the burritos. |
