The American barbeque method of cooking dates back to the 18th Century. The technique involves cooking meat for long periods of time at low temperatures with smoke, normally produced from an open fire or barbeque pit. This heat creates the distinctive smokey taste.
Light dust the meat, poultry or fish with the seasoning before placing in a hot pan or grill. Add extra seasoning to taste during cooking. Alternatively, make a marinade by mixing a tablespoon or two of the seasoning with just enough vegetable or olive oil to form a paste. Rub the marinade onto the meat, poultry or fish and cook. For a more intense flavour, leave the meat to absorb the seasoning and create a glaze before cooking.

Recipe Suggestion: BBQ-GLAZED RIBS (Serves 4)
Ingredients: Medium rack of ribs; salt and pepper; 4 tbsp olive oil; 3 tbsp BBQ Glaze Seasoning.
Method: Pre-heat the oven to 170°C/Fan 150°C/Gas Mark 3. Season a medium rack of ribs with salt and pepper. Place in a large pan and cover with boiling water, cook until tender. In a bowl, mix the olive oil with the BBQ Glaze Seasoning. Place the ribs in to a baking disk and pour over the marinade. Cover with foil and cook for 1-1½ hours. Alternatively, place the cooked ribs on the barbeque and baste with the marinade. Baste until the ribs are cooked through. Serve with jacket potatoes and coleslaw.
