The term Tex-Mex developed in the early 1970s. the first ever word ‘Tex-Mex’ was printed in 1945, referring to an adaption of Mexican dishes by Texan cooks. It is now America’s most popular regional cuisine.
Tex-Mex is characterised by its heavy use of meat (particularly beef), beans, and a great variety of spices. Tortillas, nachos, crispy chalupas, chilli con queso, chilli con carne, and fajitas are all Tex-Mex. Serving tortilla crisps and a hot sauce or salsa as an appetiser is also a Tex-Mex combination. Tex-Mex has imported flavours from other cuisines, such as cumin (common in Indian food). This blend is a mix of chilli powder, paprika, cayenne, and other great ingredients.

Recipe Suggestion: SIZZLING TEX-MEX TURKEY
Slice 4 turkey escallops into strips 2cm wide. Toss in a bowl with 1-2 tbsp Tex-Mex Seasoning, mix together well. Cover and leave in a cool place for 1 hour so the flavours really penetrate into the meat.
Heat 2 tbsp olive oil in a large frying pan or wok and briskly stir-fry the strips, a handful at a time, for 3-4 minutes or until golden brown. Divide between warm soft tortillas and roll with crisp shredded salad leaves, guacamole and fresh chopped tomato.
If you would prefer to use chicken then substitute the above turkey with 4 boneless, skinless chicken breasts.
