This herb mix combines breadcrumbs with the fruitiness of apricot and fresh crisp taste of mint for an exotic addition to your lamb or chicken.

Try liberally coating your lamb or chicken with the herb crust before cooking in the oven. You could also try adding a small amount of honey to the meat before crusting to give an indulgently sweet flavour.
