Fruity Tagine stuffed Aubergine
You will need – • Tasty Bowl Fruity Aromatic Tagine • 1 Large Aubergines • 150g Brown Rice • 100g Coriander • 50g Mint • Half a lemon • 250ml Natural Yoghurt 1. Prepare the aubergine for baking by preheating the oven to 200c (180c fan). Cut the aubergine in half lengthways and leave a border of around 2cm of the aubergine before scooping out the flesh. 2. Finely dice the scooped-out flesh and add it to a frying pan with a teaspoon of olive oil that is preheated over a medium heat. Cook until softened, around 5 minutes. 3. Add the Tasty Bowl Fruity Aromatic Tagine to the frying pan and stir to combine with the aubergine. 4. Remove from the heat and divide the mixture between the two scooped out halves of aubergine. 5. Place the filled aubergine on a lined baking tray and place in the oven uncovered for 25–30 minutes, or until the filling is hot and the top has lightly browned. 6. Whilst the aubergine is cooking prepare the brown rice according to the instructions on the packet and make the mint and coriander sauce. 7. Finely chop the coriander including the stalks with the mint leaves. Add the herbs to the yoghurt with the zest and juice of half a lemon. Mix to combine. 8. Once the rice and aubergine is cooked serve together with the herby yoghurt drizzled over the top. |
